By half past five on a February evening the canals are lit, the terraces are empty, and every brown café in Amsterdam has a candle on the table. Cold, wet and early dark is the season's gift here. The museums are at their calmest of the year, and a bridge that would be shoulder to shoulder in July is yours at seven in the evening. So the weekend leans indoors, with the outdoor moments kept short and timed to the blue hour. Expect temperatures around freezing to a few degrees above, wind off the water and rain that arrives sideways. Dress for the wind, not the thermometer: a proper coat, a hat, waterproof shoes. Good to know: if your trip lands on the fourteenth itself, reserve dinner well ahead. The small candlelit rooms that make this city romantic fill weeks out.

## Day 1 — Canal light, flowers, and a brown café

### Anchor: De Negen Straatjes

*The Nine Streets in the short daylight, then the bridges after dark*

Spend the short daylight in the Nine Streets, the lanes across the 17th-century canal belt that turn, in February, into a string of warm lit windows: independent shops, bookshops, a café each time one of you admits to being cold. Drift on to the Bloemenmarkt on the Singel. It sells more bulbs and souvenirs than cut flowers now, but you can still walk out with tulips in midwinter. Finish at dusk on the Reguliersgracht crossing, looking down seven arched bridges outlined in lights and doubled in the water. Five minutes, free, no reservation.

### Backup: Pathé Tuschinski

If the rain settles in for the night, walk two minutes from the Reguliersgracht to the Tuschinski, a 1921 cinema that is an Art Deco fever dream inside: carpets, lamps, curved balconies, and a main auditorium people photograph more than the film. Films run in their original language with Dutch subtitles, so an English-language film stays in English.

### Eat & rest

End the day in a brown café: low ceiling, candle on the table, rain on the glass. It is the city's best romantic institution, and February is its season; pick one from the list below.

*Sunset is around half past five, so shop first and save the bridges for the hour after, when the sky is deep blue rather than black. Cobbles slick in the rain; wear shoes with grip.*

## Day 2 — A great museum, and the warmest room in the city

### Anchor: Rijksmuseum

February is the Rijksmuseum's month. On a wet weekday out of season you can stand before a Vermeer for five minutes without being moved along, a different museum from the summer crush. Walk the Gallery of Honour, the Dutch Golden Age in one long room with Rembrandt's Night Watch at the end, then choose one more wing that pulls you both: delftware and dollhouses, ship models, the Asian pavilion. Leave while you still want more. Book a timed ticket online even in winter; on a rainy weekend, everyone else has had your idea.

### Backup: Hortus Botanicus Amsterdam

Step from a Dutch February into the Plantage's warmest sanctuary: the Hortus Botanicus. Founded in 1638 as a medicinal physic garden, its outdoor beds are bare now, but the glasshouses are humid, green, and thirty degrees warmer than the street, with a butterfly house alongside. The best-value winter refuge in the city.

### Eat & rest

If skies clear, take a walk through the tree-lined Plantage district or nearby Vondelpark. If rain persists, De Hallen's covered food hall and cinema in Oud-West absorb the afternoon. For Valentine's weekend dinners, book well ahead in intimate dining rooms across De Pijp or Haarlemmerdijk.

*Coats and bags go in the cloakroom. Dutch school holidays fall in February and briefly refill the museums, so a normal working week is calmer. The Hortus is fifteen minutes by tram.*

## Day 3 — An evening on the water

### Anchor: Magere Brug

*The Skinny Bridge, then a canal cruise in the warm*

In February you can stand on the Magere Brug, the white drawbridge over the Amstel outlined in small lights, in full dark by six and still make dinner. Then board a winter canal cruise, the rare outdoor plan that bad weather improves. Most operators run glass-roofed, heated boats all winter, so rain drumming on the roof becomes part of the evening while lit gables slide past. Smaller boats suit two far better. Book an after-dark departure and ask whether the boat is covered.

### Backup: Museum Van Loon

If the wind off the water has teeth, go behind one of the facades you have been admiring. Museum Van Loon keeps a patrician canal house intact: portraits, period rooms, a grand staircase, and out the back a formal garden and coach house that nobody expects. A small, unhurried hour for a last afternoon.

### Eat & rest

Catch the blue hour on the Amstel between the Blauwbrug and the Magere Brug, roughly a quarter past five to six in mid-February. Then a nightcap at Wynand Fockink behind the Dam, pouring genever since 1679: the glass comes filled to the brim, and you take the first sip bent over it, without hands.

*Bring a hat, and the layer you think you will not need. Open boats are lovely in June and a mistake in February.*

## When the weather wins \(indoor anchors, all genuinely good\)

- Van Gogh Museum \(Museumplein\): the largest collection of his work anywhere, hung as one chronological walk. Strictly timed entry; book ahead.
- Rembrandt House Museum \(Jodenbreestraat\): the house where Rembrandt lived and worked, with his studio and printing press reconstructed.

## Where to eat and drink in the cold

- Café 't Smalle \(Egelantiersgracht, Jordaan\): a tiny 18th-century room, low light, and no interest in turning your table once the terrace is out of season.
- Café Papeneiland \(Prinsengracht at the Brouwersgracht\): pouring since the 1600s, with the best corner in the city outside the door.
- Café Hoppe \(Spui\): in business since 1670; mostly standing, always busy, entirely the point.
- Winkel 43 \(Noordermarkt\): city-famous Dutch apple pie, and in February you can usually walk in.
- Valentine's night books out weeks ahead in rooms that hold thirty people. Choose together the one dinner you care about, reserve it before you fly, and leave the cafés to chance.
